Abstract :
บทคัดย่อ การวิจัยในครั้งนี้มีวัตถุประสงค์เพื่อ 1) หาวิธีการที่เหมาะสมในการใช้อาหารสุกรพันธุ์ไทยจากวัสดุเศษเหลือจากไร่นา 2) ทราบผลของการใช้อาหารจากวัสดุเศษเหลือจากไร่นาเลี้ยงสุกรพันธุ์ไทย 3) เปรียบเทียบคุณสมบัติซากและคุณภาพเนื้อของสุกรพันธุ์ไทยกับสุกรขุนทางการค้า พบว่า 1) การผึ่งใบมันสำปะหลังในร่มเป็นเวลา 12 และ 24 ชั่วโมง สามารถลดปริมาณของ Hydrocyanic acid ลงได้ประมาณ 35 และ 65% ตามลำดับ และการหมักสามารถลดปริมาณของ Hydrocyanic acid เป็นเวลา 30 60 และ 90 วัน สามารถลดปริมาณของ Hydrocyanic acid ลงได้ประมาณ 50 76 และ 86% ตามลำดับ 2) การใช้ใบมันสำปะหลังที่หมักไว้เป็นเวลา 90 วันในปริมาณ 15% ของอาหารข้นที่ประกอบด้วยมันเส้นรำข้าวและข้าวโพดไม่ทำให้เกิดผลเสียต่ออัตราการเจริญเติบโตและประสิทธิภาพการใช้อาหารของสุกรพันธุ์ไทย 3) เปอร์เซ็นต์ซากแต่งของสุกรพันธุ์ไทยไม่แตกต่างจากของสุกรสุกรขุน (P>0.05) แต่มีความยาวซากและพื้นที่หน้าตัดเนื้อสันต่ำกว่า (P<0.01) และมีความหนาไขมันสันหลังและความหนาหนังสูงกว่าสุกรขุน (P<0.01) ในการตัดแต่งซากแบบไทยซากสุกรพันธุ์ไทยมีปริมาณเนื้อแดงและกระดูกต่ำกว่า (P<0.01) แต่มีปริมาณไขมันสูงกว่า (P<0.01) สุกรขุน ปริมาณเนื้อสามชั้นของสุกรทั้ง 2 พันธุ์ไม่แตกต่างกัน (P>0.05) ในการตัดแต่งซากแบบสากล สุกรพันธุ์ไทยมีปริมาณของเนื้อส่วนที่มีไขมันมากสูงกว่า (P<0.01) แต่มีส่วนที่มีไขมันน้อย (P<0.01) ต่ำกว่าสุกรขุน เนื้อของสุกรพันธุ์ไทยมีค่าความเป็นกรดเมื่อ 1 ชั่วโมงหลังฆ่าสูงกว่าสุกรขุน (P<0.01) แต่ค่าดังกล่าวเมื่อ 24 ชั่วโมงหลังฆ่าไม่แตกต่างจากเนื้อของสุกรขุน (P>0.05) สีเนื้อของสุกรพันธุ์ไทยมีค่า L* และ b* สูงกว่าของสุกรขุน (P<0.01) เมื่อวัดที่ 1 ชั่วโมงหลังฆ่า แต่กลับมีค่าทั้งสองต่ำกว่าของสุกรขุน (P<0.01) เมื่อวัดที่ 24 ชั่วโมงหลังฆ่า แต่ไม่มีความแตกต่างกัน (P>0.05) ในด้านความเข้มสีแดง (a*) ลักษณะอื่นๆ ไม่มีความแตกต่างกัน (P>0.05) Abstract The objectives of this research were to 1) search for appropriate ways to utilize farm waste as Thai pig feed, 2) find the result of using farm waste as Thai pig feed, and 3) compare carcass and characteristics and meat quality of Thai pigs with commercial fatteners. It was found that: 1)Wilting of cassava leaves in door for 12 and 24 hours was able to reduced Hydrocyanic acid level to about 35 and 65%, respectively. Likewise, ensilaging for 30, 60 and 90 days was able to reduce the acid level to bout 50, 76 and 86%, respectively. 2)Usage of 15% 90-day fermented cassava leaves in Thai pig feed did not cause any adverse effect to growth rate and feed efficiency. 3)Dressing percentage of Thai pigs was not difference (P>0.05) from that of crossbreds, but had lower carcass length and loin eye area (P<0.01) and higher backfat thickness and skin thickness (P<0.01). In Thai style dressing, Thai pig carcass had lower amounts of lean meat and bone but had higher amount of fat than crossbred carcass. Amount of 3-layer part of the 2 breeds of pigs was not different (P>0.05). In western style dressing, Thai pig carcass had higher (P<0.01) amount of fatty cuts but had lower (P<0.01) lean cuts than crossbred carcass. Thai pig loin meat had higher 1 hour postmortem pH than that of crossbred meat but the value at 24 hours postmortem did not different. Color of Thai pig meat had higher L* and b* values at 1 hour postmortem, but had lower values at 24 hours postmortem. a* values and other meat quality traits were not different between the two breeds of pigs.
