Project Project Title : ผลของการเลี้ยงไก่พื้นเมืองแบบกึ่งปล่อยต่อสมรรถนะการเจริญเติบโต ปริมาณคอเลสเตอรอล และองค์ประกอบของกรดไขมันในเนื้อ (Effect of free-range native chicken farming on growth performance, cholesterol content and fatty acid composition of meat)     downloaded 47 times Researcher Name : วิทธวัช โมฬี (Wittawat Molee) Abstract : การวิจัยครั้งนี้มีวัตถุประสงค์เพื่อศึกษาผลของระบบการเลี้ยงแบบกึ่งปล่อย ต่อสมรรถนะการเจริญเติบโต ลักษณะซาก และคุณภาพเนื้อของไก่พื้นเมือง โดยใช้ไก่พื้นเมืองอายุ 1 วัน จำนวน 360 ตัว แบ่งออกเป็น 2 กลุ่ม ๆ ละ 6 ซ้ำ ๆ ละ 30 ตัว โดยกลุ่มที่ 1 ทำการเลี้ยงไก่ในคอกแบบขังรวม (5 ตัว/ตร.ม.) ตลอดระยะเวลาการทดลอง และกลุ่มที่ 2 ทำการเลี้ยงในคอกแบบขังรวม (5 ตัว/ตร.ม.) และมีพื้นที่ปล่อยออกสู่แปลงหญ้า (1 ตัว/ตร.ม.) ที่อายุ 8 สัปดาห์ จนสิ้นสุดการทดลอง ไก่ทั้งสองกลุ่มได้รับอาหารสูตรเดียวกันและเลี้ยงจนถึงอายุ 16 สัปดาห์ ผลการศึกษาพบว่าระบบการเลี้ยงไก่ทั้งสองแบบไม่มีผลต่อสมรรถนะการเจริญเติบโต ส่วนประกอบซาก ไขมันในช่องท้อง และปริมาณโภชนะในเนื้ออก (P>0.05) แต่อย่างไรก็ตามการเลี้ยงไก่ในระบบกึ่งปล่อยทำให้เนื้อสะโพกมีปริมาณโปรตีนเพิ่มขึ้น และทำให้ผิวหนังของไก่มีสีเหลืองเข้มกว่าไก่ที่เลี้ยงในระบบขังรวมอย่างมีนัยสำคัญทางสถิติ (P<0.05) การเลี้ยงไก่ในระบบกึ่งปล่อยไม่มีผลทำให้ปริมาณคอเลสเตอรอลในเนื้อแตกต่างกัน (P>0.05) แต่ทำให้ปริมาณคอลลาเจนและค่าแรงตัดผ่านเนื้อสูงกว่าไก่ในกลุ่มที่เลี้ยงแบบขังรวม และยังช่วยเพิ่มสัดส่วนของกรดไขมันชนิดโอเมก้า-3 และลดอัตราส่วนระหว่างกรดไขมันชนิดโอเมก้า-6 และโอเมก้า-3 ในเนื้อ (P<0.05) นอกจากนั้นการเลี้ยงไก่แบบกึ่งปล่อยยังช่วยลดความเสียหายจากการจิกขนของไก่ให้น้อยกว่าการเลี้ยงแบบขังรวมอย่างมีนัยสำคัญทางสถิติ (P<0.05) จากการศึกษาครั้งนี้ชี้ให้เห็นว่าการเลี้ยงไก่ในระบบกึ่งปล่อยไม่ส่งผลให้สมรรถนะการเจริญเติบโต และส่วนประกอบซากดีขึ้น แต่มีส่วนช่วยในการเพิ่มปริมาณคอลลาเจน สัดส่วนของกรดไขมันชนิดโอเมก้า-3 และยังช่วยลดความเสียหายจากการจิกขนของไก่พื้นเมืองให้น้อยลงกว่าการเลี้ยงแบบขังรวม Abstract The objective of this research was to investigate the effect of free range raising system on growth performance, carcass characteristics and meat quality of Thai native chickens. Three hundred and sixty 1-d-old chicks were randomly allocated to 2 treatments: indoor treatment, housing in an indoor pen (5 birds/m2) and free-range treatment, housing in an indoor pen (5 birds/m2) with access to a grass paddock (1 bird/m2) during 8 wk of age to slaughter. Each treatment was represented by 6 replications containing 30 birds each. All birds were provided with the same diet and were raised for 16 wk. The results showed that there was no difference between treatments in growth performance, carcass composition, abdominal fat yield and nutrient composition in breast meat (P>0.05). However, the chickens in the free range treatment had higher protein in thigh meat and more yellow skin than the chickens in the indoor treatment (P<0.05). There was no difference between groups in cholesterol content (P>0.05). However, the collagen content and shear force value of the chicken meat in the free range treatment were higher than that of the chicken meat in the indoor treatment (P<0.05). In addition, the proportion of n-3 fatty acids was higher and the ratio of n-6 to n-3 fatty acids was lower in free range treatment than in indoor treatment (P<0.05). Furthermore, the feather pecking damage of the chickens in the free range treatment was lower than that of the chickens in the indoor treatment (P<0.05). These data indicated that the free range raising system had no effect on growth performance and carcass composition, but could increase collagen content and the proportion of n-3 fatty acids in chicken meat.
